I would like to find out if there is a way to plot text in a filled or "colored in" method as shown on the "Plot Preview" screen.

Check your settings

If your plot preview is showing your text filled in or colored in, then that is the way it should be plotting on your printer or plotter.

Check the settings of your plotter to be sure color is enabled.
